Introduction/Description:

The cabbage roll is made according to the recipe created by the founder of the shop, it’s stuffed with pork and entirely handmade. The filling of the gourd is also handmade. The oden base broth is added with Japanese-style bonito flake according to the founder’s recipe to enhance the flavor. The cooking method of stir-fried noodles includes toasting papery dried raw shrimp in hot oil, then stir-frying the chopped scallions before steaming noodles with water and soy sauce to make the noodles taste less oily. Preparing ground pork takes a whole day, especially manually stir-frying the mixture of an 80% portion of raw ground pork with a 20% portion of pork fat. Rice with ground pork is always the most favored dish in Taiwan. The bamboo shoot from shredding to serving requires some extra time in the entire cooking procedure only by hand; the chicken is cooked with chicken broth instead of pure water for a proper flavor without an overly salted taste.  It’s a unique taste by mixing ground pork with shredded bamboo shoots.
