At "Cat Mountain Cuisine from Singapore and Malaysia," a restaurant on Heping Road in Hualien City, a figure of the durian is painted on the yellow signboard with a green background, making a sign that makes quite an impression. The owner, Zhang Weisheng, was born in Kuala Lumpur, Malaysia, and later went to Singapore to study. Every meal in the restaurant is cooked by him. The signature cuisines, such as Hainanese chicken rice, buk-kut teh, laksa seafood noodles and curry chicken, are all beloved by gourmets.


After graduating from high school in Singapore, Zhang came to Taiwan to study in the Department of Physical Education, National Taiwan Normal University. In 1988 he started teaching at Hualien Yuli High School and later at Hualien High School as a physical education instructor. His teaching career lasted for nearly 30 years. After retiring from teaching, Zhang worked as a tour guide and brought tourists on visits to beautiful places all over Taiwan. He loves food and trying new things; he savors cuisines everywhere and closely examines the cooking techniques and styles of each restaurant. He also often cooks the hometown cuisines of Singapore and Malaysia for children. Later on, with the encouragement of, friends, he finally decided to open a restaurant to share the deliciousness of his hometown cuisines with the people of Hualien.


After spending 30 years in Hualien, he has become a local, and has gone from not understanding the Hokkien dialect to being able to chat with friends and relatives fluently. "There are mountains and the sea. Very easygoing and very comfortable!" Zhang likes visiting QixingtanBeach to enjoy the seascape and Taroko National Park to enjoy views of the canyon. His favorite route is the "Walami Trail" in Zhuoxi Township, a trail located in the eastern district of Yushan National Park, along Kurakuxi, where one can enjoy the feeling of being embraced by the forest.


The Taiwanese palate is relatively light, therefore Zhang made some small adjustments to his recipes, such as using less oil, less salt and less sugar. It is his wish to offer customers delicious and healthy Singaporean/Malay cuisines, including the fragrance of pandan tea, laksa that smells appetizing, curry, and the herbal aroma of bak-kut teh. As he stir-fries with a spatula, the scent of his cuisines pervades the alleys of Hualien.
